Ingredients

3-medium-large sweet potatoes (about 1 ½ pounds), quartered

1 teaspoon grated fresh ginger

½ teaspoon cinnamon

¼ teaspoon nutmeg

1/8-teaspoon salt

1 tablespoon minced orange peel, (preferably organic)

2 tablespoons orange juice

2 tablespoons molasses

¾ cup Yogurt cheese

¼ cup pecan halves

Directions

Preheat the oven to 350 degrees F.  Lightly oil a 1-quart or 9-inch baking dish.

Steam the sweet potato pieces for about 20 to 25 minutes, until tender.  When they are cool enough to handle, remove the skins and mash with a potato masher or fork until completely smooth.  Mash in the remaining ingredients except for the pecans.

Turn the mixture into the prepared baking dish.  Decorate the top with pecans.

Bake for 20 to 25 minutes, until the top is lightly browned.  If prepared in advance and refrigerated, increase the baking time by 5 to 10 minutes.
