Thank goodness Thanksgiving is near! Halloween is over and it is time to throw the carved scary-faced pumpkin away. The real big question is what you did with the “good” stuff inside the pumpkin? Did you know the meat and seeds of pumpkin have some good health value?

Pumpkins are obviously high in beta-carotene due to that great orange look but, they are also good sources of Zinc, Magnesium, Lutein, Fiber and Iron. Are you aware pumpkins can help you fight free radicals? Those orange globes of good health are also used in the treatment of kidney, prostate, and gallbladder problems. Your eyes will like pumpkins for their source of Lutein and Zeaxanthin which help prevent the formation of cataracts and reduce the risk macular degeneration.

The next question you might be asking yourself is what can you make with pumpkin besides pie? Good question. How about Pumpkin soup… it may sound weird but it tastes better that it sounds.

Pumpkin Soup
1/2 cup onion
2 tbsp. butter
2 cups mashed cooked pumpkin
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp.ginger
1/4 tsp. ground pepper
3 cups chicken broth
1/2 cup goat milk.
Chop the onions and gently brown with butter in a pan. Put mashed pumpkin
with onions in pan. Add the cinnimon, nutmeg, ginger and pepper. Slowly add chicken
broth and heat thoroughly, but do not boil. To serve, pour into a tureen and
add the goat milk, Makes 4 to 6 small servings.
