Everyone loves a snack that you can eat without a fork! Something that is salty, spicy, or even sweet. This snack is simple to make, whether you make it for a crowd or to take with you while you are on the go. You can make different combinations, and don’t be afraid to experiment with combining flavors and textures!
Butter Baked Nuts
1 to 1-1/2 cups raw nuts (cashews, pecans, sunflower seeds, pumpkin seeds, etc…)
¼ to ½ a stick of real butter
Salt
Seasonings
Preheat oven to 275 degrees
Melt butter and seasonings in small saucepan, stir and remove from heat
Spread nuts over baking sheet
Using a basting brush carefully coat nuts with butter seasoning mixture
Watch nuts carefully and flip often. Bake until golden brown.
Tips:
When using seeds you will have to bake and coat these differently.
If you are using different combinations of nuts and seeds, make sure that you bake the seeds separately as they will bake faster. If you are using seeds, you will need to add these to the butter seasoning mixture and, using a slotted spoon, place them onto the baking sheet. You may have some that fall through the slots and you can use a regular spoon to collect the left over seeds.
Seasonings
Start off slowly when adding your seasoning to the butter. Everyone’s taste is different so you can always add more if you need to. You can use cinnamon, curry, ginger, cayenne, garlic, etc…to season the nuts and seeds. You can also combine the nuts with dried fruits such as cranberries, blueberries, raspberries, apple, or even coconut. If you are on phase two, you can add dried pineapple, bananas, and granola.
For sweeteners you can use stevia for Initial Phase or honey for InterPhase.
