Simply Salad (Italian Style!)
This is one of my favorite salads, because it covers all the bases. You get a little of this, a little of that, and most importantly, you can adjust it to either being phase 1 or phase 2!
4 cups of romaine lettuce (chopped)
2 cups of roma tomatoes (chopped)
1 cup of whole-wheat pasta cooked, drained, and chilled (optional)
¾ cup tomato basil feta cheese (crumbled)
1 cup of unpeeled cucumbers (chopped)
10 ounces smoked turkey breast (cubed)
6 slices of bacon (crumbled)
2 or 3 fresh lemons (cut in halves)
Olive oil
1 Serving platter (chilled)
Completely cover pre-chilled platter with lettuce.
Place the rest of the ingredients on the platter in sections. This way you can spoon each ingredient individually.
Drizzle olive oil and lemon juice over salad to taste
Makes 3 to 4 servings
Ideas:
There are quite a few ways to change this recipe. Some ideas are:
1. If you don’t want to use traditional bacon, try using turkey bacon.
2. You can also switch the greens you use. You can try spinach, arugula, green leaf lettuce, or even cabbage.
3. You can also use beef, shrimp, or even chicken to switch the type of protein you use.
4. Plus you can also add boiled eggs, black olives, onions, avocado, etc…if you would like to beef it up little bit.
