Aflatoxin - Noun
Any various related mycotoxins produced by a species of Aspergillus, commonly A. Flavus. Commonly found in grains, universally in corn (Etzel, JAMA). Suspected of causing liver cancer in humans and other animals.
Why it is important
Aflatoxin commonly contaminates many of the foods Doug says not to eat on the Initial Phase diet. By eliminating these foods from your diet, you can minimize your exposure to this potentially dangerous mycotoxin.
