Avocado Salad

With this recipe, you can add as much or as little of the ingredients as you like.


1 large cucumber (peeled and cubed)
½ whole jicama (peeled and cubed), about 1½ cups
2 large avocados (pitted and cubed)
2 to 3 Tbsp chopped cilantro
2 limes
1 Tbsp olive oil
salt and pepper to taste



Cube the cucumber, jicama and avocados to your preferred size and put into a large mixing bowl.  Sprinkle with the cilantro and toss gently.

Add the juice from the limes, you can also use some of the zest from the limes if you like.

Add the olive oil and season with salt and pepper.

Toss gently, cover and refrigerate for 1 to 2 hours to chill and let the flavors combine.
