Chocolate Whoopie Cookies

Category: Desserts

chocolate-whoopie-cookies-720px

These cookies are a little slice of heaven and totally Kaufmann Diet friendly and Kid approved. You could eat them for dinner they are so healthy!

I think they are best when refrigerated overnight. You might even try freezing them and "voila" you have an ice cream sandwich.

It is very important that you not overcook these cookies. Bake for 12 minutes only! Cookies will be soft and moist, not browned. When in doubt cook them less time.

Cookie Ingredients:

2 large eggs
1 cup raw unsweetened sunflower butter
1 1/2 Tsp vanilla extract
1/2 Tsp apple cider vinegar
14 drops liquid stevia
1/2 cup xylitol
1/4 cup unsweetened cocoa powder
2 Tbsp buckwheat powder
1/2 Tsp baking soda
1/4 Tsp sea salt

* Preheat oven to 350 degrees Line 2 cookie sheets with parchment paper.
* Beat eggs with mixer in medium bowl and then add sunflower butter, vanilla, apple cider vinegar and liquid stevia
* Add all dry ingredients and mix thoroughly.
* Combine wet and dry ingredients and mix well with electric mixer.
* A 1 1/2 tablespoon cookie scoop works great to evenly portion out dough onto cookie sheet. Flatten cookies gently using the back of a spoon.
* Bake for 12 minutes and cool on cooling rack for 10 -15 minutes
